Instructions
- 1. Cook the pasta in a large pot of boiling salted water until al dente. Drain and reserve about a cup of pasta water.
- 2. In a skillet, heat olive oil over medium heat. Add the sliced andouille sausage and sauté until browned, about 5-7 minutes.
- 3. Add the chopped onion to the skillet and sauté until soft and translucent, about 3-4 minutes.
- 4. Stir in the minced garlic and cook for about 1 minute until fragrant.
- 5. Pour in the chicken broth and bring to a simmer for about 3 minutes.
- 6. Lower the heat and stir in the heavy cream, allowing it to thicken for 3-4 minutes.
- 7. Mix in the grated Parmesan cheese until melted and creamy.
- 8. Season with salt, black pepper, and red pepper flakes to taste.
- 9. Add the cooked pasta to the skillet and toss to coat in the sauce. Use reserved pasta water to adjust the consistency if needed.
- 10. Garnish with chopped parsley and serve immediately.
