Instructions
1. Cook the pasta in a large pot of boiling salted water until al dente. Drain and reserve about a cup of pasta water.
2. In a skillet, heat olive oil over medium heat. Add the sliced andouille sausage and sauté until browned, about 5-7 minutes.
3. Add the chopped onion to the skillet and sauté until soft and translucent, about 3-4 minutes.
4. Stir in the minced garlic and cook for about 1 minute until fragrant.
5. Pour in the chicken broth and bring to a simmer for about 3 minutes.
6. Lower the heat and stir in the heavy cream, allowing it to thicken for 3-4 minutes.
7. Mix in the grated Parmesan cheese until melted and creamy.
8. Season with salt, black pepper, and red pepper flakes to taste.
9. Add the cooked pasta to the skillet and toss to coat in the sauce. Use reserved pasta water to adjust the consistency if needed.
10. Garnish with chopped parsley and serve immediately.
Notes
This dish can be customized with vegetables or different types of sausage. Serve with garlic bread or a salad for a complete meal.
