Ingredients
  

  • 1 ciabatta bun or English muffin Ciabatta bun or English muffin
  • 1 tablespoon Mayonnaise
  • 1/2 ripe avocado Ripe avocado
  • 1 large egg Large egg
  • 2 teaspoons Unsalted butter
  • 1 small handful Fresh baby spinach optional
  • 1 slice Provolone or cheddar cheese
  • 1 slice Sliced red onion optional
  • Salt to taste
  • Black pepper to taste

Instructions
 

  • Start by toasting the ciabatta bun or English muffin halves. You want them to be golden brown and crispy, which adds a delightful texture to your sandwich.
  • Once toasted, spread a generous layer of mayonnaise on the bottom half of the bun. This will provide a rich and creamy base that pairs beautifully with the other ingredients.
  • Next, place the slices of avocado on top of the mayonnaise. If you prefer, you can mash the avocado for a smoother spread. Season the avocado with salt and black pepper to enhance its natural flavors.
  • In a non-stick skillet, heat the unsalted butter over medium heat. Once melted, pour in the beaten egg. Stir gently while cooking, making sure to season with salt and black pepper as you go. Look for the eggs to become fluffy but not overcooked.
  • If you’re using baby spinach, add it to the pan when the eggs are almost fully set. Stir it in and let it wilt slightly, imparting its nutrition and flavor to the eggs.
  • When the eggs are just about done, place the slice of provolone or cheddar cheese on top. Cover the pan for a minute or two to allow the cheese to melt into the eggs.
  • Once melted, carefully transfer the egg mixture onto the bottom half of your toasted bun or muffin. The warmth of the eggs will slightly toast the bun, making for a delightful bite.
  • If you’re using red onion, now’s the time to add a few slices on top of the eggs. This will add a refreshing crunch and a hint of sharpness to balance the richness of the eggs and cheese.
  • Finally, place the other half of the bun or muffin on top to complete your sandwich. Press down gently to combine all the flavors, and it’s ready to serve!

Notes
