  • Begin by whisking together the almond milk, cornstarch, granulated sugar, vanilla extract, ground cinnamon, baking powder, and a pinch of kosher salt in a wide, shallow bowl. Mix until smooth, ensuring there are no lumps of cornstarch remaining. You want the mixture to be velvety, with a light sweetness from the sugar.
  • Meanwhile, place a skillet over medium heat and add a small amount of vegan butter or oil. Once hot, you should see the butter start to melt gently, sizzling invitingly. This is the perfect moment to start soaking your bread.
  • Take your slices of thick vegan bread and dip each slice into the batter. Soak them for about 5 to 10 seconds on each side. Be careful not to overstimulate the bread; you want it to absorb just enough of the mixture to stay tender without falling apart.
  • Now, carefully place the soaked bread slices in the hot skillet. Fry the French toast for about 3 minutes on each side. Listen for that lovely sizzle! You’re looking for a golden brown color to appear on the outside, indicating they’re ready to flip.
