Equipment

  • Mixing Bowl
  • Frying Pan
  • Chef's Knife
  • Baking Sheet
  • Oven

Ingredients

  • 4 to 5 pieces Bananas overly ripe
  • 1 cup Coconut palm sugar or turbinado sugar
  • 1/4 cup Water
  • 1 teaspoon Vanilla
  • 1 3/4 cups Whole wheat flour
  • 1/4 cup Cocoa powder
  • 1/2 teaspoon Baking soda
  • 1 teaspoon Cinnamon
  • 1 teaspoon Baking powder
  • 1/4 cup Vegan chocolate chips
  • 1/4 cup Nuts chopped walnuts or pecans work best

Instructions

  • Preheat your oven to 350 degrees Fahrenheit. This ensures that your bread will bake evenly and thoroughly.
  • In a large mixing bowl, mash the bananas until they’re smooth. You can use a fork or a potato masher for this step. Make sure to leave no lumps for an even texture.
  • Add the coconut palm sugar and vanilla to the mashed bananas. With a hand mixer, blend the ingredients together until well combined. The mixture should be smooth and creamy.
  • Gradually pour in the water while mixing. This will help to achieve the right consistency of the batter. Continue mixing until everything is incorporated.
  • In another bowl, combine the whole wheat flour, cocoa powder, baking soda, cinnamon, and baking powder. Stir these dry ingredients together until evenly mixed.
  • Now, it’s time to combine the wet and dry mixtures. Slowly add the dry ingredients into the banana mixture. Use a fork or spatula to fold the dry mixture into the wet mixture. Be careful not to overmix; you just want everything to come together.
  • Fold in the vegan chocolate chips and chopped nuts until they are evenly distributed throughout the batter. This adds wonderful texture and flavor to your bread.
  • Pour the batter into a nonstick loaf pan, ensuring that it's evenly spread out. You want a nice, even loaf when it bakes.
  • Place the loaf pan in the preheated oven and bake for 55 to 65 minutes. Start checking for doneness around the 50-minute mark. A cake tester inserted into the center should come out clean when it’s done.
  • Once baked, remove the loaf from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before slicing. This cooling time helps to set the structure of the bread, ensuring clean slices.

Notes

  • Tip 1: Choose very ripe bananas with brown spots for the best sweetness and moisture in your bread.
  • Tip 2: When combining wet and dry ingredients, mix just until incorporated to avoid a dense texture.
  • Tip 3: Always start checking for doneness a few minutes early. Oven temperatures can vary, affecting baking time.
  • Tip 4: Allow the bread to cool completely before slicing; this helps it firm up and makes for easier cutting.
