Ingredients
  

  • 4 chops Veal Thick cut
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 1 large Orange juiced
  • 2 tablespoons Whole grain mustard
  • 2 tablespoons Balsamic vinegar
  • 2 tablespoons Olive oil
  • 1 teaspoon Rosemary dried
  • 2 cloves Garlic minced

Instructions
 

  • Preheat your oven to 220C/425F. This temperature is perfect for achieving that beautiful sear on the chops while ensuring they cook through evenly.
  • In a bowl, combine the fresh juice of a large orange, whole grain mustard, balsamic vinegar, minced garlic, and dried rosemary. Mix these ingredients well until they are fully blended.
  • Season your veal chops with salt and pepper. Don't be shy with the seasoning; it enhances the flavors and complements the marinade beautifully.
  • Add the marinade to a zip lock bag and place the seasoned veal chops inside. Make sure they are well coated by shaking the bag gently. Let them marinate for at least a few minutes, but if you have time, up to 24 hours is ideal.
  • Heat a grill pan over medium-high heat and drizzle with olive oil. Once hot, add the veal chops carefully. Cook them for about 4 minutes on each side. You want a nice golden brown crust without overcooking the meat.
  • Transfer the chops to a baking dish, ensuring they fit comfortably. Pour the remaining marinade over the top. This will help keep them moist while baking.
  • Bake the veal chops for approximately 3 minutes for medium-rare (130°F), 4 minutes for medium (140°F), and 7 minutes for well-done (160°F). Use a meat thermometer to ensure they are cooked to your liking.
  • Once done, remove the chops from the oven and let them rest for five minutes before serving. This resting period allows the juices to redistribute throughout the meat, resulting in a juicier bite.
  • Serve your veal chops with your favorite sides and enjoy the incredible flavors you’ve created. Don’t forget to drizzle some of that delicious marinade over the top!

Notes

  • Glaze: Glaze the veal with your favorite sauce, like bulgogi sauce or katsu sauce.
  • Storage: Place the leftovers in a sealed container and keep them in the refrigerator for 3-4 days.
  • Reheating: Thaw the frozen chops overnight in the fridge, and reheat them in a skillet or an oven.
