Ingredients
  

  • ½ cup whole milk or 2%
  • ½ cup heavy whipping cream
  • 3 tablespoons granulated sugar
  • 3 large egg yolks
  • 1 teaspoon pure vanilla extract

Instructions
 

  • In a small saucepan over medium heat, combine the heavy whipping cream with whole milk and granulated sugar. Whisk until simmering.
  • Whisk the egg yolks in a small bowl and add ¼ cup of the hot cream mixture while whisking continuously to temper the eggs.
  • Add another ¼ cup of hot cream mixture to the yolks, whisking again.
  • Pour the tempered mixture back into the saucepan and cook for 3 to 4 minutes while whisking until thickened.
  • Remove from heat and stir in pure vanilla extract. Serve warm or cool for later use.

Notes

Keep leftovers in the fridge for 3 to 5 days. You can reheat it gently when ready to use.
