whole milk or 2%

heavy whipping cream

granulated sugar

egg yolks

teaspoon
pure vanilla extract
Instructions
In a small saucepan over medium heat, combine the
heavy whipping cream
with
whole milk
and
granulated sugar
. Whisk until simmering.
Whisk the
egg yolks
in a small bowl and add ¼ cup of the hot cream mixture while whisking continuously to temper the eggs.
Add another ¼ cup of hot cream mixture to the yolks, whisking again.
Pour the tempered mixture back into the saucepan and cook for 3 to 4 minutes while whisking until thickened.
Remove from heat and stir in
pure vanilla extract
. Serve warm or cool for later use.
Notes
Keep leftovers in the fridge for 3 to 5 days. You can reheat it gently when ready to use.
