Ingredients
  

  • 4 sweet or russet potatoes
  • 1 pesto
  • 1 greek yogurt
  • 1 manchego cheese
  • 1 chicken chili with cheddar cheese
  • 1 refried beans
  • 1 sour cream
  • 1 salsa
  • 1 bbq chicken

Instructions
 

  • Preheat your oven to 400F degrees.
  • Poke several holes in the sides of the potatoes.
  • Place the potatoes on a baking sheet lined with foil.
  • Bake the potatoes for 1 hour.
  • Once baked, remove the potatoes from the oven and let them cool slightly.
  • Slice the potatoes down the middle.
  • Scoop out half of the flesh using a spoon.
  • Fill each taco with desired toppings.
  • Top with pesto, Greek yogurt, and a sprinkle of Manchego cheese.
  • Finally, serve your Tacos hot.
