Instructions
1. Prepare your ingredients: chop the onion and bell pepper, mince the garlic, and set aside.
2. Pat the beef dry with paper towels and season with salt and pepper.
3. Dredge the beef in flour, shaking off excess.
4. Heat oil in a skillet over medium-high heat and sear the beef for 4-5 minutes on each side until browned.
5. Remove beef and sauté onion, bell pepper, and garlic in the same skillet for 3-4 minutes.
6. Add diced tomatoes, beef broth, Worcestershire sauce, oregano, thyme, and bay leaf. Stir to combine.
7. Return beef to the skillet, bring to a simmer, cover, and cook on low for 1.5 to 2 hours until tender.
8. Remove beef, let rest, and simmer sauce uncovered for 10-15 minutes to thicken.
9. Slice beef against the grain and return to sauce to soak up flavors.
10. Serve hot, garnished with parsley, over mashed potatoes or rice.
Notes
Swiss Steak can be made ahead of time and tastes even better the next day. It also freezes well for up to three months.
