Ingredients
  

  • 1 cup old-fashioned rolled oats gluten free if desired
  • 1/4 cup oat flour gluten free if desired
  • 2 tablespoons flaxseed meal
  • 2 teaspoons ground cinnamon
  • Pinch sea salt
  • 3/4 cup raw cashews
  • 3/4 cup raw pecans
  • 1/2 cup raw walnuts
  • 1/2 cup raw pumpkin seeds
  • 1/2 cup raw sliced almonds
  • 1/2 cup hemp seeds/hearts
  • 1 cup unsweetened coconut flakes (not shredded coconut)
  • 1/3 cup melted coconut oil
  • 1/4 cup pure maple syrup
  • 1 teaspoon vanilla

Instructions
 

  • Preheat your oven to 300 degrees F. This helps create that perfect crunchy texture we all love in granola.
  • Line a large baking sheet with parchment paper. This prevents the granola from sticking and makes cleanup a breeze.
  • In a large bowl, stir together the old-fashioned rolled oats, oat flour, flaxseed meal, ground cinnamon, sea salt, raw cashews, raw pecans, raw walnuts, raw pumpkin seeds, sliced almonds, hemp seeds, and coconut flakes. Make sure everything is evenly combined to ensure each bite is packed with flavor.
  • In a small saucepan, add the melted coconut oil, maple syrup, and vanilla. Place it over low heat, stirring frequently until the coconut oil is completely melted. This will help blend the flavors together.
  • Pour the melted mixture over the dry ingredients and mix well until all the oats and nuts are fully coated. This step is crucial for getting that crunchy texture.
  • Spread the granola mixture evenly on the prepared baking sheet. Use a spatula to press it down gently. We want it to bake like one big cookie for that perfect crunch!
  • Bake for 35 to 40 minutes or until golden brown and fragrant. Keep an eye on it, as the edges can brown quickly.
  • Once done, remove it from the oven and allow the granola to cool on the baking sheet for 10 to 15 minutes. This cooling time helps it to clump together.
  • When cool, break it into large clumps or your desired size. The texture should be wonderfully crunchy!
  • Transfer your granola to an airtight container or a large mason jar. It keeps well for a week, but I doubt it will last that long!
