Equipment

  • silicone mini donut pan

Ingredients

  • 1 cup almond flour
  • cup unsalted butter melted
  • ¼ cup granulated sweetener
  • 4 medium eggs or 3 large
  • 2 tablespoon heavy cream
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • ¼ cup granulated sweetener to roll the donuts in
  • ½ teaspoon cinnamon optional

Instructions

  • Preheat your oven to 175 Celsius (350 Fahrenheit). This is an essential step, as a properly preheated oven ensures even baking. While the oven heats up, grab your silicone mini donut pan and brush the inside with melted butter or grease it with cooking spray to prevent sticking.
  • In a large mixing bowl, blend the melted butter, heavy cream, and granulated sweetener using an electric mixer or a food processor. Mix until the mixture is smooth and well combined. This step is crucial for achieving a creamy and rich batter.
  • Add the eggs and vanilla extract to the bowl and blend until everything is well incorporated. The eggs will help bind the mixture and give your donuts a lovely texture.
  • Next, gradually add the almond flour and baking powder into the mixture. Continue blending until you have a smooth batter. Make sure there are no lumps, as this will affect the final texture of your donuts.
  • Now it’s time to fill your well-greased donut pan! Use a spoon to carefully spoon the batter into each mould. Be cautious not to overfill them, as the batter will rise during baking.
  • Place the filled donut pan in your preheated oven and bake for about 15 minutes, or until the donuts are lightly golden. Keep an eye on them, as baking times can vary slightly based on your oven.
  • Once baked, remove the donut pan from the oven and allow the donuts to cool completely before removing them from the pan. This is a critical step; they firm up as they cool down, making them easier to handle.
  • In a small, shallow bowl, add some more granulated sweetener (and optional cinnamon if desired). Once the donuts have cooled, press each one into the sweetener to coat both sides. This adds a delightful finishing touch!
  • Serve your Sugar Free Donuts fresh for the best taste, or store them in an airtight container for later. Enjoy your guilt-free treat!

Notes

  • Tip 1: 1g net carbs per donut. Makes 14 mini donuts (6 cm diameter, weight: 20-24g).
  • Tip 2: If you prefer a glaze, mix 2 tablespoons butter, 1 tablespoon heavy cream, and 2 tablespoons powdered sweetener with a ¼ teaspoon vanilla extract.
  • Tip 3: You can also melt 85-90% dark chocolate with 1 teaspoon of coconut oil for a chocolate glaze!
  • Tip 4: This recipe makes 6-7 regular size donuts in a standard donut pan. Increase the oven time by around 5 minutes.
  • Tip 5: Let the donuts cool COMPLETELY before removing them from the pan. They firm up as they cool down.
