Instructions
1. Prepare the Dutch oven: Place your Dutch oven on the stove over medium heat.
2. Rinse the corned beef: Remove the corned beef from its packaging and rinse it under cold water.
3. Brown the beef: Sear the corned beef brisket in the pot, fat side down for about 4-5 minutes.
4. Add aromatics: Remove the beef and sauté the sliced onion and minced garlic for about 3 minutes.
5. Deglaze the pot: Pour in the apple cider vinegar and scrape the bottom of the pot.
6. Add liquids and spices: Pour in the water and beef broth, then stir in the black peppercorns, bay leaves, and mustard seeds.
7. Return the beef: Place the corned beef back into the Dutch oven, fat side up.
8. Simmer: Cover the Dutch oven and reduce the heat to low. Simmer for about 2.5 to 3 hours.
9. Add vegetables: After the initial cooking time, add the carrots, potatoes, and cabbage.
10. Continue cooking: Cover and let everything simmer for another 30 to 40 minutes.
11. Rest and slice: Remove the beef and let it rest for about 10-15 minutes before slicing.
