Preheat your oven to 400℉ and line a baking sheet with parchment paper.
Season the chicken cubes with salt and pepper.
In a shallow plate, crack open the eggs, season them with a little salt and pepper, then beat them well.
Pour the Panko breadcrumbs into another shallow plate.
Take each piece of seasoned chicken, dip it first into the egg mixture, then dredge it through the breadcrumbs.
Arrange the coated chicken pieces on the baking sheet.
Place the baking sheet in the preheated oven and bake for about 20 to 30 minutes.
While the chicken is baking, it’s time to prepare the sauce. In a small saucepan, combine the remaining sauce ingredients.
Heat the saucepan over medium-high heat until the mixture begins to boil. Then, reduce the heat and let it simmer for about 2 to 3 minutes.
Once the chicken is cooked and crispy, remove it from the oven. Place the cooked chicken pieces in a large mixing bowl, pour the sauce over them, and toss well to ensure each piece is coated.
Garnish your Sticky Honey Sriracha Chicken Bites with chopped chives and sesame seeds before serving.
