Ingredients
  

  • 8 ounces spaghetti
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 4 ounces fresh baby spinach
  • 2 tablespoons fresh basil chopped
  • 2 tablespoons fresh parsley chopped
  • salt and pepper to taste
  • 1/2 cup grated Parmesan cheese

Instructions
 

  • Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  • Add the fresh baby spinach to the skillet, stirring until it wilts, about 2-3 minutes.
  • Stir in the fresh basil and fresh parsley, and cook for an additional minute. Season with salt and pepper to taste.
  • Add the cooked spaghetti to the skillet with the spinach mixture. Toss well to combine. Sprinkle with grated Parmesan cheese before serving.

Notes

Store leftovers in an airtight container in the fridge for up to three days.
