- 4 cups baby spinach
- 2 cups frozen peas
- 2 tablespoons avocado optional
- 1 teaspoon lemon juice optional
- 1 teaspoon olive oil optional
Bring 1 cup of water to a boil in a medium pot. Add the spinach and peas, stirring gently to combine.
Cover the pot and reduce the heat to medium-high. Cook for about 4 to 5 minutes, or until the spinach is just wilted. Keep an eye on it to avoid overcooking.
Carefully transfer the mixture to a blender.
Blend until very smooth, starting on low and gradually increasing to high.
