  • 1. Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.
  • 2. Heat olive oil in a large skillet over medium-high heat. Add chicken and season with salt and pepper. Cook for 5-7 minutes until golden brown.
  • 3. Add minced garlic to the skillet and sauté for 30 seconds until fragrant.
  • 4. Stir in sun-dried tomatoes and heat through for about 2 minutes.
  • 5. Pour in heavy cream and let the sauce simmer for about 5 minutes.
  • 6. Add spinach and stir until wilted, about 2-3 minutes.
  • 7. Mix in red pepper flakes and Italian seasoning. Adjust seasoning as needed.
  • 8. Combine cooked pasta with the sauce, adding reserved pasta water if needed for consistency.
  • 9. Stir in grated Parmesan cheese and serve immediately.
