Ingredients
  

  • 1 cup old-fashioned rolled oats or gluten-free oats
  • 1/3 cup finely crushed graham crackers can use gluten-free
  • 2 tablespoons chia seeds
  • a pinch sea salt
  • 1/2 cup creamy peanut butter can use almond butter
  • 1/4 cup honey
  • 1/2 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips
  • 1/4 cup Mallow Bits

Instructions
 

  • In a large bowl, combine 1 cup of rolled oats, 1/3 cup of finely crushed graham crackers, 2 tablespoons of chia seeds, and a pinch of sea salt. Stir them together to ensure an even distribution. You should notice the mixture being a bit crumbly at this stage.
  • Next, add in 1/2 cup of creamy peanut butter, 1/4 cup of honey, and 1/2 teaspoon of vanilla extract. The peanut butter should be smooth to make it easier to mix. Use a spatula or your hands to blend everything together until the mixture becomes moist and well-combined. It may take a bit of effort, but it’s worth it!
  • Now, gently fold in the 1/4 cup of mini chocolate chips and 1/4 cup of Mallow Bits. This is the fun part! Make sure the chocolate chips and Mallow Bits are evenly distributed throughout the mixture. You want to ensure you get a bit of chocolate in every single bite.
  • Once your mixture is ready, start rolling it into small balls, about 1 to 2 tablespoons per ball. I find it helpful to dampen my hands slightly, making it easier to shape without sticking too much. Place each ball on a parchment-lined baking sheet or plate.
  • After you have rolled all the mixture into balls, transfer them to an airtight container. These S'mores Energy Bites can be stored in the refrigerator for up to 2 weeks. Enjoy them whenever you need a quick, tasty snack!
