Instructions
Wash the baby potatoes thoroughly under cold water.
Place the washed potatoes in a large pot, cover with cold water, and add salt.
Bring to a boil, then reduce heat and simmer for 15-20 minutes until fork-tender.
Drain the potatoes and let them cool for a few minutes.
In a mixing bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, salt, and pepper. Whisk until smooth.
Gently smash the cooled potatoes with a fork or potato masher.
Add the smashed potatoes to the dressing and fold gently to coat.
Add diced celery, red bell pepper, green onions, and dill. Fold to combine.
Taste and adjust seasoning with salt and pepper if necessary.
Transfer to a serving dish, cover, and refrigerate for at least 30 minutes.
