Instructions
 

  • Wash the baby potatoes thoroughly under cold water.
  • Place the washed potatoes in a large pot, cover with cold water, and add salt.
  • Bring to a boil, then reduce heat and simmer for 15-20 minutes until fork-tender.
  • Drain the potatoes and let them cool for a few minutes.
  • In a mixing bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, salt, and pepper. Whisk until smooth.
  • Gently smash the cooled potatoes with a fork or potato masher.
  • Add the smashed potatoes to the dressing and fold gently to coat.
  • Add diced celery, red bell pepper, green onions, and dill. Fold to combine.
  • Taste and adjust seasoning with salt and pepper if necessary.
  • Transfer to a serving dish, cover, and refrigerate for at least 30 minutes.
  • Before serving, stir gently and garnish with fresh herbs if desired.

Notes

This salad can be made a day in advance for enhanced flavor. Store in an airtight container in the refrigerator.
