Slow Cooker
- 1 ½ pounds Boneless skinless chicken breast
- 1 package Taco seasoning
- 1 Jalapeño seeded and sliced
- 1 jar Salsa
- 1 diced Yellow onion about 1 ½ cups
- Salt to taste
- Iceberg lettuce leaves for wrapping
Spray slow cooker with non-stick cooking spray.
Sprinkle the taco seasoning on the chicken breasts and lay them on the bottom of the slow cooker.
Put the diced onion and jalapeño over the top of the chicken breasts, and pour salsa on top.
Cover and cook chicken on low for 4 to 5 hours.
Take the cooked chicken out of the slow cooker and shred it. Place it back in the slow cooker and stir to combine. Add salt to taste.
To serve, place about ¼ of the chicken mixture in the center of the lettuce wrap and roll up! Enjoy!
