Instructions
 

  • Preheat your oven to 350 degrees Fahrenheit and prepare a 9x13 baking dish by spraying it lightly with cooking spray. This ensures that your Skinny Mac n Cheese doesn’t stick and bakes evenly.
  • In a large pot, bring salted water to a boil over high heat. Once boiling, add in the elbow pasta and cook according to the package instructions until al dente. Drain the pasta once done, and set it aside.
  • While the pasta cooks, take a large mixing bowl and combine the cheddar cheese soup, Greek yogurt, sour cream, salt, and black pepper. Stir well to create a smooth mixture that will coat the pasta beautifully.
