Cook the egg noodles according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté for about 5 minutes until translucent.
Add minced garlic to the skillet and sauté for an additional minute.
Incorporate the cooked turkey into the skillet and heat through for about 2-3 minutes.
Add frozen mixed vegetables and cook for about 5 minutes until heated through.
Pour in chicken broth and milk, stirring to combine.
Season with salt and pepper to taste.
Add cooked egg noodles and fold into the mixture.
Sprinkle shredded cheddar cheese over the top.
Preheat oven to 350°F (175°C). Cover the skillet with a lid or foil.
Bake for 20-25 minutes until cheese is melted and bubbly.
Let cool for a few minutes before serving.
