Instructions

  • Add minced garlic and cook for an additional 1-2 minutes until fragrant.
  • Stir in diced bell peppers and cook for 3-4 minutes until tender.
  • Add fresh spinach and cook until wilted, about 1-2 minutes.
  • Pour in chicken broth and bring to a gentle simmer.
  • Add tortellini and cook according to package instructions, about 3-5 minutes.
  • Season with salt and pepper, then stir in grated Parmesan cheese until melted.
  • Remove from heat and let sit for a minute before serving. Garnish with additional Parmesan if desired.

Notes
