Ingredients
  

Meat

  • 1 pound Ground Beef or Turkey Browned and drained of excess fat.

Seasoning

  • 2 tablespoons Taco Seasoning Adjust to spice preference.

Beans

  • 1 can (15 oz) Black Beans Drained and rinsed.

Vegetables

  • 1 cup Corn Frozen or canned.

Sauce

  • 1 cup Tomato Sauce Binds ingredients together.

Cheese

  • 2 cups Shredded Cheddar Cheese For topping.

Chips

  • 2 cups Crushed Tortilla Chips For topping.

Toppings

  • Fresh Toppings Optional: diced tomatoes, shredded lettuce, jalapeños, sour cream.

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, add the ground meat and cook until browned, about 6-8 minutes.
  • Drain excess fat from the skillet.
  • Add taco seasoning to the meat and stir well, cooking for 1-2 minutes.
  • Add black beans and corn, then pour in the tomato sauce and stir to combine. Simmer for 5 minutes.
  • Prepare a baking dish by greasing it lightly.
  • Layer half of the crushed tortilla chips in the baking dish.
  • Pour half of the meat mixture over the chips and sprinkle with 1 cup of cheese.
  • Repeat layering with remaining chips, meat mixture, and cheese.
  • Cover with foil and bake for 25 minutes.
  • Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
  • Let cool for 5-10 minutes before serving. Add fresh toppings as desired.

Notes

This casserole is great for leftovers and can be made in advance. It can also be customized with different meats or toppings.
