  • 1.5 pounds Bone-in, skin-on chicken thighs About 4 to 6 thighs recommended.
  • 0.5 cup Mayonnaise
  • 0.25 cup Sweet chili sauce
  • 2 tablespoons Sriracha
  • 3 cloves Garlic, minced
  • 2 tablespoons Chopped green onions For garnish.
  • 2 tablespoons Olive oil For searing the chicken.

Instructions
 

  • Gather all your ingredients. Ensure chicken thighs are thawed and pat them dry.
  • In a medium bowl, mix together mayonnaise, sweet chili sauce, and Sriracha. Whisk until smooth and set aside.
  • Season chicken thighs with salt and pepper on both sides.
  • Heat a large skillet over medium-high heat and add olive oil. Allow the oil to heat until shimmering.
  • Place chicken thighs skin-side down in the skillet. Sear for about 5-7 minutes without moving them.
  • Flip the chicken thighs and reduce heat to medium. Cook for an additional 5-7 minutes until cooked through.
  • Remove chicken from skillet and cover with aluminum foil to keep warm.
  • Add minced garlic to the skillet and sauté for about 30 seconds until fragrant.
  • Pour in the Bang Bang sauce and bring to a gentle simmer. Cook for 1-2 minutes until heated through.
  • Return chicken thighs to the skillet, coating them with the sauce. Simmer for a minute.
  • Serve over rice or noodles, garnished with chopped green onions.

Notes

Consider adding pineapple chunks to the sauce for a fruity twist or smoked paprika for a smokier flavor.
