Ingredients
  

  • 1 pound Shrimp Fresh or frozen, peeled and deveined.
  • 8 ounces Tortilla Chips Sturdy type to hold toppings.
  • 2 cups Cheese Shredded cheddar or Monterey Jack.
  • 1 handful Fresh Cilantro Chopped.
  • 1 Avocado Ripe, diced.
  • 1 cup Tomatoes Diced.
  • 0.5 small Onion Red onion, finely chopped.
  • 1-2 Jalapeños Sliced, optional for heat.
  • 1 Lime Juice Juice of one lime.
  • Seasonings Salt, pepper, paprika, garlic powder.

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Rinse the shrimp under cold water and pat dry.
  • Season the shrimp with salt, pepper, and spices in a mixing bowl.
  • Heat olive oil in a skillet and cook the shrimp for 2-3 minutes on each side.
  • Remove the shrimp from the skillet and set aside.
  • Spread tortilla chips on a baking sheet.
  • Sprinkle cooked shrimp over the tortilla chips.
  • Sprinkle shredded cheese over the shrimp and chips.
  • Bake for 10-12 minutes until cheese is melted and bubbly.
  • Prepare fresh toppings while nachos bake.
  • Add fresh toppings to nachos after baking.
  • Drizzle lime juice and sprinkle cilantro before serving.
  • Serve immediately while warm.

Notes

Store leftovers in an airtight container for up to two days. Reheat in the oven.
