  • 1 pound Shrimp, peeled and deveined Fresh or frozen, thawed if frozen.
  • 3 cups Cooked Rice Preferably day-old rice for best texture.
  • 1 cup Mixed Vegetables Peas, carrots, and bell peppers, diced.
  • 2 cloves Garlic, minced
  • 3 tablespoons Soy Sauce Low-sodium preferred.
  • 2 large Eggs, beaten
  • 2 stalks Green Onions, sliced For garnish.
  • 1 tablespoon Sesame Oil For flavor enhancement.

Instructions
 

  • Prepare all ingredients: peel and devein shrimp, and if using frozen shrimp, thaw them. Cook rice if not using leftover rice.
  • Heat a large skillet or wok over medium-high heat and add oil. Sauté minced garlic until fragrant.
  • Add shrimp in a single layer and cook until pink and opaque, about 2-3 minutes per side. Remove and set aside.
  • Add mixed vegetables to the pan and sauté until softened, about 3-4 minutes.
  • Push vegetables to one side, scramble the eggs in the empty space, and mix with the vegetables.
  • Add the cooked rice, breaking up clumps, and pour soy sauce over it. Mix thoroughly.
  • Fold in the cooked shrimp and heat through for an additional 2-3 minutes.
  • Drizzle sesame oil and add sliced green onions. Stir gently and adjust seasoning if necessary.
  • Serve immediately, garnished with extra green onions if desired.

Notes

For variations, consider adding different vegetables, using cauliflower rice for a low-carb option, or adding chili for spice.
