Shrimp, peeled and deveined
Fresh or frozen, thawed if frozen.

Preferably day-old rice for best texture.

Peas, carrots, and bell peppers, diced.

Soy Sauce
Low-sodium preferred.

Instructions
Prepare all ingredients: peel and devein shrimp, and if using frozen shrimp, thaw them. Cook rice if not using leftover rice.
Heat a large skillet or wok over medium-high heat and add oil. Sauté minced garlic until fragrant.
Add shrimp in a single layer and cook until pink and opaque, about 2-3 minutes per side. Remove and set aside.
Add mixed vegetables to the pan and sauté until softened, about 3-4 minutes.
Push vegetables to one side, scramble the eggs in the empty space, and mix with the vegetables.
Add the cooked rice, breaking up clumps, and pour soy sauce over it. Mix thoroughly.
Fold in the cooked shrimp and heat through for an additional 2-3 minutes.
Drizzle sesame oil and add sliced green onions. Stir gently and adjust seasoning if necessary.
Serve immediately, garnished with extra green onions if desired.
Notes
For variations, consider adding different vegetables, using cauliflower rice for a low-carb option, or adding chili for spice.
