Wash the shrimp under cold water and pat dry with paper towels.
Rinse the potatoes thoroughly and cut larger ones in half for uniform cooking.
In a large stockpot, bring 4 quarts of water to a rolling boil. Add Cajun seasoning and salt, stirring to combine.
Add the potatoes to the boiling water and cook for 10-12 minutes until fork-tender.
Add the corn and cook for an additional 5-7 minutes until tender but crisp.
Gently stir in the shrimp and cook for 3-5 minutes until pink and opaque.
Prepare a serving platter lined with parchment paper.
Carefully strain the mixture through a colander to drain the water.
Transfer the shrimp and vegetables to the platter and squeeze lemon wedges over the top.
