  • 1 pound Ground Sausage Choose spicy or mild based on preference.
  • 2 cups Fresh Green Beans Trimmed and cut into bite-sized pieces.
  • 4 medium Potatoes Peeled and cubed.
  • 1 medium Onion Finely chopped.
  • 2 cloves Garlic Minced.
  • 1 cup Low-Sodium Chicken Broth
  • 1 cup Shredded Cheddar Cheese For topping.
  • to taste Salt and Pepper For seasoning.
  • 1 tablespoon Olive Oil For sautéing.
  • to taste Fresh Parsley Chopped for garnish.

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, add olive oil and ground sausage. Cook until browned, about 5-7 minutes.
  • Add chopped onion and minced garlic to the skillet. Sauté for 3-4 minutes until the onion is translucent.
  • Add green beans to the skillet and cook for another 3 minutes.
  • In a mixing bowl, combine cubed potatoes with the sausage mixture.
  • Pour in chicken broth and season with salt and pepper. Mix thoroughly.
  • Transfer the mixture to a greased 9x13-inch baking dish and spread evenly.
  • Top with shredded cheddar cheese.
  • Cover with aluminum foil and bake for 30 minutes.
  • Remove foil and bake for an additional 15-20 minutes until cheese is golden and bubbly.
  • Let cool for 5 minutes and garnish with parsley before serving.

Notes

This casserole can be made ahead of time and stored in the refrigerator. It also freezes well for up to 3 months.
