Instructions
Preheat your oven to 375°F (190°C).
In a large skillet over medium heat, add olive oil and ground sausage. Cook until browned, about 5-7 minutes.
Add chopped onion and minced garlic to the skillet. Sauté for 3-4 minutes until the onion is translucent.
Add green beans to the skillet and cook for another 3 minutes.
In a mixing bowl, combine cubed potatoes with the sausage mixture.
Pour in chicken broth and season with salt and pepper. Mix thoroughly.
Transfer the mixture to a greased 9x13-inch baking dish and spread evenly.
Top with shredded cheddar cheese.
Cover with aluminum foil and bake for 30 minutes.
Remove foil and bake for an additional 15-20 minutes until cheese is golden and bubbly.
Let cool for 5 minutes and garnish with parsley before serving.
Notes
This casserole can be made ahead of time and stored in the refrigerator. It also freezes well for up to 3 months.
