Ingredients
  

Chicken

  • 4 pieces Boneless, skinless chicken breasts About 1.5 pounds total.

Salsa Verde

  • 6 medium Tomatillos Husked and rinsed.
  • 1 cup Fresh cilantro leaves Packed.
  • 3 cloves Garlic Minced.
  • 1/4 cup Fresh lime juice Preferably freshly squeezed.
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt To taste.
  • 1/2 teaspoon Black pepper Freshly ground.

Instructions
 

  • In a blender or food processor, combine tomatillos, cilantro, garlic, lime juice, olive oil, salt, and black pepper. Blend until smooth.
  • Preheat your oven to 375°F (190°C). Pat chicken breasts dry with paper towels.
  • In a baking dish, place chicken breasts in a single layer and pour half of the salsa verde over them.
  • Cover with aluminum foil and bake for 25 minutes.
  • Remove foil, pour remaining salsa verde over chicken, and bake uncovered for an additional 15-20 minutes.
  • Let the chicken rest for 5 minutes before slicing.
  • Serve with salsa verde drizzled on top and garnish with additional cilantro if desired.

Notes

This dish is versatile and can be served with rice, tortillas, or salads. It also stores well for meal prep.
