Ingredients
  

Bread

  • 2 slices Bread (sourdough or whole grain) Thick enough to hold up against melted cheese and pesto.

Pesto

  • 2 tablespoons Fresh pesto Adds a burst of flavor.

Cheese

  • 2-3 slices Cheese (mozzarella or cheddar) Melts beautifully for a gooey texture.

Butter

  • 1 tablespoon Unsalted butter For spreading on the bread.

Optional Add-ins

  • to taste Tomato slices or spinach For extra flavor and nutrition.

Instructions
 

  • Gather all your ingredients: bread, cheese, pesto, and butter.
  • Spread a generous layer of pesto on one side of one slice of bread.
  • Place cheese slices on top of the pesto-covered slice.
  • If using, layer optional ingredients like tomato or spinach on top of the cheese.
  • Spread butter on one side of the second slice of bread.
  • Place the buttered side of the second slice on top of the cheese and pesto, buttered side facing out.
  • Heat a non-stick skillet over medium heat and place the sandwich in the pan.
  • Cook for 3-4 minutes until the bottom is golden brown, then flip and cook for another 3-4 minutes.
  • Remove from the pan, let cool for a minute, then slice in half and serve warm.

Notes

For variations, consider adding jalapeños for spice, different cheeses, or roasted vegetables.
