Instructions
Gather all your ingredients: bread, cheese, pesto, and butter.
Spread a generous layer of pesto on one side of one slice of bread.
Place cheese slices on top of the pesto-covered slice.
If using, layer optional ingredients like tomato or spinach on top of the cheese.
Spread butter on one side of the second slice of bread.
Place the buttered side of the second slice on top of the cheese and pesto, buttered side facing out.
Heat a non-stick skillet over medium heat and place the sandwich in the pan.
Cook for 3-4 minutes until the bottom is golden brown, then flip and cook for another 3-4 minutes.
Remove from the pan, let cool for a minute, then slice in half and serve warm.
Notes
For variations, consider adding jalapeños for spice, different cheeses, or roasted vegetables.
