Instructions
 

  • Preheat your oven to 425°F (220°C).
  • Prepare the sweet potatoes by peeling them and cutting them into 1-inch cubes.
  • In a large mixing bowl, combine the cubed sweet potatoes with olive oil and toss until evenly coated.
  • In a small bowl, mix together the maple syrup, chipotle powder, salt, and pepper.
  • Drizzle the maple-chipotle mixture over the sweet potatoes and toss again until well coated.
  • Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
  • Roast the sweet potatoes for about 25 to 30 minutes, stirring halfway through.
  • Check for doneness by piercing a sweet potato cube with a fork; it should feel tender.
  • Remove from the oven and let cool for a few minutes before garnishing with fresh cilantro.
  • Serve warm and enjoy!

Notes
