  • 14 ounces Kielbasa Sausage Sliced into bite-sized pieces.
  • 2 medium Bell Peppers One red and one green, diced.
  • 1 medium Yellow Onion Chopped finely.
  • 2 medium Yukon Gold Potatoes Diced into small cubes.
  • 2 cloves Garlic Minced.
  • 2 tablespoons Olive Oil For sautéing.

Instructions
 

  • Prepare all ingredients: chop kielbasa, dice bell peppers, finely chop onion, mince garlic, and cube potatoes.
  • Heat olive oil in a large skillet over medium heat until hot.
  • Add diced potatoes to the skillet, season with salt and pepper, and cook undisturbed for 5-7 minutes.
  • Add chopped onion and sauté for another 3-4 minutes until translucent.
  • Incorporate sliced kielbasa sausage and stir to combine.
  • Add diced bell peppers and cook for an additional 5-7 minutes.
  • Add minced garlic and cook for an additional minute.
  • Continue cooking until potatoes are tender and sausage is browned, about 10 more minutes.
  • Taste and adjust seasoning with more salt and pepper if necessary.
  • Remove from heat and let sit for a minute before serving.
  • Serve warm, garnished with fresh herbs if desired.
