Instructions
Prepare all ingredients: chop kielbasa, dice bell peppers, finely chop onion, mince garlic, and cube potatoes.
Heat olive oil in a large skillet over medium heat until hot.
Add diced potatoes to the skillet, season with salt and pepper, and cook undisturbed for 5-7 minutes.
Add chopped onion and sauté for another 3-4 minutes until translucent.
Incorporate sliced kielbasa sausage and stir to combine.
Add diced bell peppers and cook for an additional 5-7 minutes.
Add minced garlic and cook for an additional minute.
Continue cooking until potatoes are tender and sausage is browned, about 10 more minutes.
Taste and adjust seasoning with more salt and pepper if necessary.
Remove from heat and let sit for a minute before serving.
Serve warm, garnished with fresh herbs if desired.
