Instructions
Cook the ground beef in a skillet over medium heat until browned, about 5-7 minutes. Drain excess fat.
Add diced onion to the skillet and sauté for 3-4 minutes until translucent. Then add minced garlic and cook for an additional minute.
Stir in chili powder and cumin, allowing them to toast slightly.
Add the can of diced tomatoes with green chiles and simmer for 5 minutes.
Reduce heat to low and mix in the softened cream cheese until melted, then gradually add shredded cheddar cheese until smooth.
Season with salt and pepper to taste, then transfer to a serving bowl and garnish with fresh cilantro.
