Instructions
In a medium-sized bowl, combine the chopped chipotle peppers, adobo sauce, minced garlic, lime juice, olive oil, salt, and pepper. Whisk until well blended.
Place the steak in a resealable plastic bag or shallow dish. Pour the marinade over the steak, ensuring it is evenly coated. Seal and refrigerate for at least 30 minutes, or up to 4 hours.
Preheat your grill, skillet, or broiler to medium-high heat.
Remove the steak from the marinade and cook on the grill or skillet for about 4-5 minutes on each side for medium-rare.
Check the internal temperature with a meat thermometer (130°F for medium-rare). Let the steak rest for 5-10 minutes before slicing.
Slice the steak against the grain into thin strips and garnish with chopped cilantro before serving.
