Instructions
Preheat your oven to 375°F (190°C).
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 3 to 5 minutes.
Add the minced garlic and sauté for an additional minute.
Add the fresh spinach and cook until wilted, about 3 to 4 minutes.
In a mixing bowl, combine the cooked spinach and onion mixture with the softened cream cheese. Mix until well incorporated.
Add the grated Parmesan cheese, Italian seasoning, salt, and pepper to the mixture. Stir until evenly distributed.
Season the chicken breasts with salt and pepper on both sides.
In a baking dish, spread a thin layer of the spinach and cream cheese mixture on the bottom.
Place the seasoned chicken breasts on top and spoon the remaining spinach mixture over the chicken.
Cover with aluminum foil and bake for 25 minutes.
Remove the foil and continue baking for an additional 15 minutes.
Check the internal temperature of the chicken; it should reach at least 165°F (75°C).
Let it rest for about 5 minutes before serving.
