  • 1 pound Boneless, Skinless Chicken Breast Cut into strips or cubes.
  • 8 ounces Pasta Use penne or fusilli.
  • 2 medium Bell Peppers Preferably one red and one green, sliced.
  • 1 medium Onion Sliced.
  • 2 tablespoons Fajita Seasoning Store-bought or homemade.
  • 2 tablespoons Olive Oil For sautéing.

  • optional Grated Parmesan Cheese For topping.
  • optional Fresh Cilantro Chopped, for garnish.

Instructions
 

  • 1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente, about 8-10 minutes. Drain and set aside, reserving about a cup of pasta water.
  • 2. Season the chicken with salt, pepper, and 1 tablespoon of fajita seasoning. Heat olive oil in a skillet over medium-high heat and sauté the chicken until cooked through, about 5-7 minutes.
  • 3. Add the sliced onion and bell peppers to the skillet, sautéing for another 5-6 minutes until softened but still crunchy.
  • 4. Sprinkle the remaining fajita seasoning over the mixture and stir to combine.
  • 5. Add the drained pasta to the skillet, tossing everything together. If too dry, add reserved pasta water gradually.
  • 6. Adjust seasoning with salt and pepper. If desired, stir in grated Parmesan cheese until melted.
  • 7. Garnish with fresh cilantro and serve hot.
