Instructions
1. Cook the pasta in a large pot of salted boiling water until al dente, about 8-10 minutes. Drain and reserve some pasta water.
2. In a large skillet, heat olive oil over medium heat. Add the Cajun sausage and sauté until browned, about 5-7 minutes.
3. Add minced garlic to the skillet and stir for about 1 minute until fragrant.
4. Pour in the heavy cream and stir to combine, heating through.
5. Gradually add the Parmesan cheese, stirring until melted and smooth. Adjust the consistency with reserved pasta water if necessary.
6. Season with Cajun seasoning, salt, and pepper to taste.
7. Add the cooked pasta to the skillet, tossing to coat in the sauce.
8. Cook for an additional 2-3 minutes over low heat, stirring occasionally.
9. Serve garnished with chopped parsley.
