Instructions
Heat a large skillet over medium heat and add olive oil. Sauté chopped onion for 3-4 minutes until translucent.
Add minced garlic and cook for an additional 1-2 minutes.
Add ground beef, breaking it apart, and season with chili powder, cumin, and salt. Cook until browned, about 6-8 minutes.
Remove from heat and preheat oven to 350°F (175°C).
Warm tomato sauce in a medium saucepan over medium heat.
Fill each tortilla with beef mixture and cheese, roll them up, and place seam-side down in a baking dish.
Spread a layer of tomato sauce on the bottom of the dish, then pour remaining sauce over the enchiladas and sprinkle with cheese.
Cover with foil and bake for 20 minutes, then remove foil and bake for an additional 10 minutes until cheese is bubbly.
Let cool for a few minutes, garnish with cilantro, and serve hot.
Notes
For variations, consider adding jalapeños for heat, using different cheeses, or substituting ground turkey for a healthier option.
