  • Begin by preparing your chicken breast. Rinse it under cold water and pat it dry with paper towels.
  • Season the chicken breast generously with salt and pepper.
  • In a large skillet, heat 2 tablespoons of olive oil over medium heat until shimmering.
  • Carefully place the seasoned chicken breast in the hot skillet and cook for about 6-7 minutes on one side.
  • Flip the chicken breast and cook for an additional 6-7 minutes or until the internal temperature reaches 165°F (75°C).
  • Remove the chicken from the skillet and let it rest for a few minutes.
  • Chop any fresh vegetables into bite-sized pieces.
  • Shred the chicken using two forks or chop it into bite-sized pieces.
  • In a large mixing bowl, combine the shredded chicken with 1 cup of BBQ sauce.
  • In individual serving bowls, add 1 cup of cottage cheese as the base.
  • Top the cottage cheese with the barbecue chicken mixture.
  • Add the chopped vegetables on top of the chicken.
  • Garnish with fresh herbs before serving.
  • Serve immediately while warm.
