Instructions
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
Add the diced chicken breast, season with salt and pepper, and cook for 4-5 minutes until golden brown.
Remove the chicken from the skillet and set aside.
Add the remaining tablespoon of oil and sauté the minced garlic for 30 seconds.
Add the diced bell peppers, peas, and sliced carrots, stir-frying for 3-4 minutes.
Return the cooked chicken to the skillet and pour in the Bang Bang sauce, simmer for 2 minutes.
Add the cooked rice, breaking up clumps, and stir to combine.
Cook for an additional 3-4 minutes, stirring constantly.
Adjust seasoning if necessary and fold in the chopped green onions before serving.
Serve hot, garnished with additional green onions if desired.
Notes
Leftovers can be stored in an airtight container for up to three days. Reheat in a skillet or microwave.
