  • 4 cups Cooked Rice Day-old rice is best to prevent mushiness.
  • 1 pound Chicken Breast Boneless, skinless, cut into bite-sized pieces.
  • 1 cup Diced Bell Peppers Use a mix of colors for visual appeal.
  • 1 cup Peas
  • 1 cup Sliced Carrots
  • 1/2 cup Mayonnaise For the Bang Bang sauce.
  • 1/4 cup Sweet Chili Sauce For the Bang Bang sauce.
  • 1 tablespoon Sriracha For the Bang Bang sauce.
  • 2 cloves Garlic Minced.
  • 1/4 cup Chopped Green Onions Add at the end for freshness.
  • 2 tablespoons Vegetable Oil For stir-frying.
  • Salt To taste.
  • Pepper To taste.

Instructions
 

  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  • Add the diced chicken breast, season with salt and pepper, and cook for 4-5 minutes until golden brown.
  • Remove the chicken from the skillet and set aside.
  • Add the remaining tablespoon of oil and sauté the minced garlic for 30 seconds.
  • Add the diced bell peppers, peas, and sliced carrots, stir-frying for 3-4 minutes.
  • Return the cooked chicken to the skillet and pour in the Bang Bang sauce, simmer for 2 minutes.
  • Add the cooked rice, breaking up clumps, and stir to combine.
  • Cook for an additional 3-4 minutes, stirring constantly.
  • Adjust seasoning if necessary and fold in the chopped green onions before serving.
  • Serve hot, garnished with additional green onions if desired.

Notes

Leftovers can be stored in an airtight container for up to three days. Reheat in a skillet or microwave.
