Instructions
 

  • 1. Rinse the shrimp under cold water and pat them dry with paper towels.
  • 2. In a large skillet, heat the olive oil over medium heat until it shimmers.
  • 3. Add the finely chopped onion and sauté for about 4-5 minutes until translucent.
  • 4. Add the minced garlic and sauté for an additional minute.
  • 5. Pour in the crushed tomatoes and let the mixture simmer for about 5 minutes.
  • 6. Sprinkle in the dried oregano, red pepper flakes, salt, and pepper, stirring to combine.
  • 7. Gently place the shrimp into the skillet and cook for about 3-5 minutes until pink and opaque.
  • 8. Sprinkle the crumbled feta cheese over the top and let it soften for about 2 minutes.
  • 9. Garnish with chopped fresh parsley and serve directly from the skillet with crusty bread.

Notes

Store leftovers in an airtight container in the refrigerator for up to two days. Reheat gently on the stove.
