Shrimp

  • 1 pound large shrimp, peeled and deveined Fresh or frozen shrimp will work.

Instructions
 

  • 1. If using frozen shrimp, ensure they are completely thawed. Pat them dry with a paper towel.
  • 2. In a mixing bowl, combine the shrimp with olive oil, minced garlic, chili powder, cumin, smoked paprika, salt, and pepper. Toss until well coated and marinate for at least 15 minutes.
  • 3. Heat a large skillet over medium-high heat. Add a tablespoon of olive oil to the pan.
  • 4. Add the sliced onions and bell peppers to the skillet. Sauté for about 5-7 minutes until tender and slightly charred. Remove and set aside.
  • 5. In the same skillet, add the marinated shrimp in a single layer. Cook for about 2-3 minutes on one side until pink and opaque, then flip and cook for another 2-3 minutes.
  • 6. Return the sautéed vegetables to the skillet. Squeeze lime juice over the mixture and stir. Cook for another minute to heat through.
  • 7. Serve immediately with warm tortillas and your choice of toppings.

Notes

Leftover shrimp fajitas can be stored in an airtight container in the refrigerator for up to three days. Reheat gently before serving.
