Equipment

  • Peeler
  • Mixing Bowl
  • Frying Pan
  • Chef's Knife
  • Cutting Board
  • Baking Sheet
  • Oven

Ingredients

  • 1 medium sweet potato about 3/4 pound or 12 ounces, peeled and cut into 3/4-inch dice
  • 1 tablespoon olive oil
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground cumin
  • 1/8 teaspoon smoked paprika
  • 1/2 teaspoon salt more to taste
  • 1 15-ounce can black beans drained and rinsed
  • 2 cups shredded curly kale
  • 1 to taste freshly ground black pepper
  • 1 sliced avocado
  • 1 poached egg
  • 1 salsa

Instructions

  • Preheat your oven to 400 degrees Fahrenheit and grab a large rimmed sheet pan. This is where the magic happens, so make sure it’s ready to go.
  • Next, place the cubed sweet potato onto the sheet pan. Drizzle the olive oil generously over the top, ensuring that the potatoes are well-coated. Sprinkle the onion powder, garlic powder, cumin, smoked paprika, and 1/2 teaspoon salt evenly over the sweet potatoes.
  • Now, it’s time to toss! Using a wooden spoon or your hands, mix everything together thoroughly. Make sure every piece of sweet potato gets a good coating of oil and spices. You want to give them enough space on the pan to roast nicely.
  • Slide the sheet pan into the preheated oven. Bake for about 15 to 20 minutes, tossing them halfway through. You’re looking for the potatoes to become tender and just starting to brown. The aroma will be heavenly!
  • Once they’re golden and tender, pull them out of the oven. Add the black beans and kale to the pan, tossing gently to combine everything. The heat from the potatoes will warm the beans and wilt the kale beautifully.
  • Return the pan to the oven for another 5 minutes. This will ensure the beans are heated through and the kale is perfectly tender.
  • After another 5 minutes, remove the pan from the oven. Take a moment to taste and adjust the seasoning, adding more salt and black pepper if necessary.
  • Now for the best part: serving! You can serve it warm, topped with fresh avocado slices, a drizzle of salsa, and a poached egg for a delightful breakfast experience.
  • Enjoy every bite of your Sheet Pan Vegetarian Breakfast Hash and savor the wonderful flavors!

Notes

  • Tip 1: Vegetarian option (if you’re a vegetarian who eats eggs): Add a poached egg if desired.
