Ingredients
  

  • ¼ cup Unsalted Butter Melted for the batter

Instructions
 

  • Preheat your oven to 425°F. It's crucial that the oven is hot so that your pancakes rise properly. Grease a 9 x 13 baking sheet with cooking spray and set it aside.
  • In a large bowl, melt the butter in the microwave. Make sure it's completely melted and then let it cool slightly before mixing with the other ingredients.
  • In another large bowl, whisk together the flour, baking powder, salt, and light brown sugar. Ensure there are no lumps so that your pancakes are smooth.
  • Add the buttermilk, almond extract, vanilla extract, cooled butter, and eggs into the dry mixture. Whisk until mostly smooth. Don’t worry if there are a few lumps; that’s perfectly fine!
  • Pour the pancake batter into your greased sheet pan, making sure to spread it evenly. This ensures that every pancake bakes uniformly.
  • Add the berries right on top of the pancake batter. Feel free to use other toppings you love as well.
  • Bake in the preheated oven for 14 to 18 minutes. Keep an eye on them; your pancakes are done when a toothpick inserted in the center comes out clean.
  • Once baked, remove the pan from the oven and allow it to cool slightly. After a few minutes, cut the pancakes into rectangles or squares.
  • These can be served as is, or you can top them with additional berries, whipped cream, or a drizzle of syrup for an extra sweet touch!
