Instructions
 

  • Prepare your sourdough starter, ensuring it is active and bubbly.
  • In a large mixing bowl, combine 3 cups of all-purpose flour and 1 to 2 teaspoons of salt.
  • In a separate bowl, mix 1 cup of sourdough starter with 1 to 1.5 cups of warm water.
  • Pour the wet mixture into the dry ingredients and mix until a shaggy dough forms.
  • Fold in 1/4 to 1/2 cup of finely chopped fresh herbs and 1 to 2 cups of shredded cheese.
  • Knead the dough on a floured surface for 5 to 10 minutes until smooth and elastic.
  • Place the dough in a greased bowl, cover, and let it rise for 1 to 2 hours until doubled in size.
  • Punch down the dough, divide it into 12 to 16 pieces, and shape into balls.
  • Place the rolls on a parchment-lined baking sheet and let rise for another 30 to 45 minutes.
  • Preheat the oven to 375°F (190°C).
  • Brush the tops with olive oil and sprinkle with sesame seeds if desired.
  • Bake for 20 to 25 minutes until golden brown and hollow-sounding when tapped.
  • Cool on a wire rack for a few minutes before serving.

Notes

Store leftovers in an airtight container for up to two days or freeze for longer storage.
