Instructions
Preheat your oven to 400°F (200°C).
Prepare the kielbasa by making deep cuts along the sausage at one-inch intervals without cutting all the way through.
If using fresh pineapple, peel, core, and cut into rings. If using canned, drain and pat dry.
Mix honey, garlic powder, and black pepper in a small bowl to create a glaze.
Drizzle olive oil in a baking dish and place the kielbasa in the center with cuts facing up.
Tuck pineapple rings into the cuts of the kielbasa and brush with the honey glaze.
Cover with aluminum foil and bake for 20 minutes.
Remove foil and bake for an additional 15-20 minutes until browned and caramelized.
Let rest for a few minutes, then garnish with parsley before serving.
Notes
For variations, consider adding jalapeños for spice or using different types of sausage.
