Instructions
Preheat your oven to 375°F (190°C).
Boil salted water and cook lasagna noodles until al dente, about 8-10 minutes. Drain and cool slightly.
In a mixing bowl, combine ricotta cheese, Italian seasoning, half of the mozzarella cheese, salt, and pepper. Mix well.
Spread 2-3 tablespoons of the ricotta mixture on each lasagna noodle, layer with pepperoni slices and remaining mozzarella cheese, then roll up.
Place rolled noodles seam side down in a greased baking dish.
Pour half of the marinara sauce over the roll-ups, ensuring they are covered.
Sprinkle Parmesan and remaining mozzarella cheese on top, drizzle with olive oil, and cover with foil.
Bake for 25 minutes, then remove foil and bake for an additional 15-20 minutes until cheese is bubbly and golden.
Let sit for 10 minutes before serving. Garnish with fresh herbs if desired.
