Instructions
Prepare all ingredients: dice chicken, slice mushrooms, chop onion and garlic, and measure broth and cream.
Heat a large skillet over medium-high heat and add olive oil until it shimmers.
Add chicken to the skillet, season with salt and pepper, and sauté for 5-7 minutes until golden brown and cooked through.
Remove chicken from skillet and set aside.
Add chopped onion to the skillet and sauté for 2-3 minutes until translucent.
Add minced garlic and sliced mushrooms, sauté for an additional 4-5 minutes until mushrooms are tender.
Pour in chicken broth and bring to a simmer, scraping up browned bits from the skillet.
Reduce heat to low, stir in heavy cream, and allow sauce to thicken for 2-3 minutes.
Return cooked chicken to skillet, stir to coat in sauce, and simmer for another 2-3 minutes.
Add chopped fresh herbs, stir to combine, and adjust seasoning if needed.
Remove from heat and let sit for a minute before serving.
Serve warm, garnished with additional fresh herbs if desired.
Notes
This dish can be served over rice, pasta, or alongside a fresh salad. Leftovers can be stored in an airtight container for up to three days.
