Ingredients
  

Protein

  • 1 pound Boneless Skinless Chicken Breast Cut into bite-sized pieces.

Vegetables

  • 8 ounces Fresh Mushrooms Sliced, such as cremini or button.
  • 3-4 cloves Garlic Minced.
  • 1 medium Onion Finely chopped.

Liquids

  • 1 cup Low-Sodium Chicken Broth
  • 1/2 cup Heavy Cream

Fats

  • 2 tablespoons Olive Oil For sautéing.

Herbs and Spices

  • to taste Salt
  • to taste Pepper
  • 1/4 cup Fresh Herbs Chopped, such as thyme or parsley.

Instructions
 

  • Prepare all ingredients: dice chicken, slice mushrooms, chop onion and garlic, and measure broth and cream.
  • Heat a large skillet over medium-high heat and add olive oil until it shimmers.
  • Add chicken to the skillet, season with salt and pepper, and sauté for 5-7 minutes until golden brown and cooked through.
  • Remove chicken from skillet and set aside.
  • Add chopped onion to the skillet and sauté for 2-3 minutes until translucent.
  • Add minced garlic and sliced mushrooms, sauté for an additional 4-5 minutes until mushrooms are tender.
  • Pour in chicken broth and bring to a simmer, scraping up browned bits from the skillet.
  • Reduce heat to low, stir in heavy cream, and allow sauce to thicken for 2-3 minutes.
  • Return cooked chicken to skillet, stir to coat in sauce, and simmer for another 2-3 minutes.
  • Add chopped fresh herbs, stir to combine, and adjust seasoning if needed.
  • Remove from heat and let sit for a minute before serving.
  • Serve warm, garnished with additional fresh herbs if desired.

Notes

This dish can be served over rice, pasta, or alongside a fresh salad. Leftovers can be stored in an airtight container for up to three days.
