Ingredients
  

Protein

  • 1 pound Ground Turkey or Chicken Lean source of protein.

Vegetables

  • 1 medium Onion Finely chopped.
  • 3 cloves Garlic Minced.

Base

  • 1 can (28 ounces) Crushed Tomatoes Primary base for the soup.
  • 4 cups Vegetable Broth Low-sodium preferred.
  • 2 teaspoons Italian Seasoning Blend of herbs.

Pasta

  • 12 ounces Tortellini Fresh or frozen cheese tortellini.

Greens

  • 2 cups Fresh Spinach Added at the end of cooking.

Cheese

  • ½ cup Parmesan Cheese Grated, for serving.

Seasoning

  • Salt and Pepper To taste.

Instructions
 

  • Heat a large pot or Dutch oven over medium heat. Add olive oil and sauté the chopped onion for about 5 minutes until translucent.
  • Add minced garlic and stir for 30 seconds until aromatic.
  • Add ground turkey or chicken, breaking it apart. Cook for 6-8 minutes until browned.
  • Sprinkle in Italian seasoning, salt, and pepper. Stir to combine.
  • Pour in crushed tomatoes and vegetable broth. Stir and bring to a simmer.
  • Reduce heat to low and let simmer for 10 minutes.
  • Add tortellini and cook for 5-7 minutes until tender.
  • Fold in fresh spinach and stir until wilted.
  • Stir in grated Parmesan cheese until melted. Adjust seasoning if necessary.
  • Serve hot, garnished with additional Parmesan cheese and fresh herbs if desired.

Notes

Consider adding vegetables like bell peppers or zucchini for extra nutrition. For a creamier texture, stir in heavy cream or ricotta before serving.
