Instructions
Heat a large pot or Dutch oven over medium heat. Add olive oil and sauté the chopped onion for about 5 minutes until translucent.
Add minced garlic and stir for 30 seconds until aromatic.
Add ground turkey or chicken, breaking it apart. Cook for 6-8 minutes until browned.
Sprinkle in Italian seasoning, salt, and pepper. Stir to combine.
Pour in crushed tomatoes and vegetable broth. Stir and bring to a simmer.
Reduce heat to low and let simmer for 10 minutes.
Add tortellini and cook for 5-7 minutes until tender.
Fold in fresh spinach and stir until wilted.
Stir in grated Parmesan cheese until melted. Adjust seasoning if necessary.
Serve hot, garnished with additional Parmesan cheese and fresh herbs if desired.
Notes
Consider adding vegetables like bell peppers or zucchini for extra nutrition. For a creamier texture, stir in heavy cream or ricotta before serving.
