  • 12 ounces Kielbasa Sliced into bite-sized pieces.
  • 1 pound Gnocchi Store-bought.
  • 4 cups Vegetable Broth Low-sodium preferred.
  • 1 medium Onion Finely chopped.
  • 3 cloves Garlic Minced.
  • 2 medium Carrots Diced.
  • 2 stalks Celery Chopped.
  • 2 cups Spinach Fresh.
  • 2 tablespoons Olive Oil For sautéing.
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon Salt To taste.
  • 0.5 teaspoon Pepper To taste.

Instructions
 

  • Heat olive oil in a large pot over medium heat until shimmering.
  • Add chopped onions and sauté for about 5 minutes until soft and translucent.
  • Introduce minced garlic and stir for 1 minute, being careful not to burn it.
  • Add diced carrots and chopped celery, cooking for an additional 5 minutes.
  • Stir in sliced kielbasa and cook for 3-4 minutes until browned.
  • Pour in vegetable broth and scrape the bottom of the pot to release flavorful bits.
  • Add Italian seasoning, salt, and pepper, stirring to combine.
  • Bring to a gentle boil, then reduce heat and simmer for 10 minutes.
  • Add gnocchi and cook for 2-3 minutes until they float to the surface.
  • Fold in fresh spinach and stir until wilted, about 1-2 minutes.
  • Taste and adjust seasoning if necessary before serving warm.

Notes

For a spicy twist, add red pepper flakes. You can also incorporate seasonal vegetables or add a splash of lemon juice before serving.
