Instructions
Heat olive oil in a large pot over medium heat until shimmering.
Add chopped onions and sauté for about 5 minutes until soft and translucent.
Introduce minced garlic and stir for 1 minute, being careful not to burn it.
Add diced carrots and chopped celery, cooking for an additional 5 minutes.
Stir in sliced kielbasa and cook for 3-4 minutes until browned.
Pour in vegetable broth and scrape the bottom of the pot to release flavorful bits.
Add Italian seasoning, salt, and pepper, stirring to combine.
Bring to a gentle boil, then reduce heat and simmer for 10 minutes.
Add gnocchi and cook for 2-3 minutes until they float to the surface.
Fold in fresh spinach and stir until wilted, about 1-2 minutes.
Taste and adjust seasoning if necessary before serving warm.
Notes
For a spicy twist, add red pepper flakes. You can also incorporate seasonal vegetables or add a splash of lemon juice before serving.
